    Actually my nephew caught this redfish...fought it for 30 minutes..about 30 lbs...

    He said it was "about" 30 lbs. He didn't say how - how would you say that - "how" about 30 lbs., or "how much" about 30 lbs., or, I mean it could be "about" 29 lbs. short of "about" 30 lbs. but still be "about" 30 lbs. "Close to..." "In the spectrum of...."

    Anyway, I love Blackened Redfish. Time to unplug the smoke dectors. Actually, I found that out the hard way. Here's my recipe which I used to use in the restaurant in California a long time ago.

    Melt butter
    Dip fish fillets in butter both sides
    Sprinkle liberally -- uh oh... it goes againt my grain to use that "l" word in a positive sense... backup
    Sprinkle... a lot... of a good "Blackened Seasoning"... or Cajun Spice all over the buttered fish so that it sticks. By "a lot" I mean... well, "a lot".
    Back up again... I forgot to tell you to heat a good, big, heavy cast iron pan to real hot... don't oil it... by real hot, I mean if you drop a drop of water on it, it rolls around and bounces and is gone just like that
    Okay, now put your seasoned buttered fish fillets in the pan... backup...
    Take a deep breath of fresh air because that's the only one you're going to get for a while... Pro...ceed...
    After you take a deep breath... Now... put your fish fillets on the hot unseasoned skillet
    Cook one side very quickly. Then turn the fish over and sear the other side ... Quickly both sides unless you want fish leather
    You're done. That's it.
    If you didn't turn off the Smoke Detectors... invide the firemen in for some Blackened Red Fish

    Here's my nephew...plus the fish...he fought so hard we named him Sparticus...
    actually we sport fish, catch them, then let them go back home...loser buys the beer...

    Hmmm... My 9lb walleye looked about that big...

    Seems men exaggerate most measurements. Laughing

    Just kidding. Looks like a mighty fine fish. I am a sport fisherman too. Can't remember the last time I kept a fish I caught. Kudos!
